“All Hail the Umami Burger”

For two years, Los Angeles has been in the thrall of the Umami burger, a meat bomb served with roasted tomatoes, shitake mushrooms, and a Parmesan chip on a bun that is as extroverted and glistering as a bodybuilder’s oiled rump, and is branded with a “U.” Adam Fleischman, the aptly named owner of Umami Burger—which now has five locations in Los Angeles and one in San Francisco—recently partnered with the nightlife mogul Sam Nazarian.
