Eight years ago, Memphis Garrett was a busser at one of sbe’s early venues, Montana Lounge in Santa Monica. Fast forward to today, he’s Director of Operations at the soon to be open Hyde Beach Kitchen + Cocktails in Hallandale, FL. In rising the ranks at sbe, he’s opened countless venues including Industry, Hyde Mammoth, Hyde STAPLES, Colony, Blok, Greystone Manor and more. For this installment of “Role Call”—where we go behind the scenes to introduce you to the colorful crew that is sbe— Memphis dishes on hospitality, what makes for a stellar restaurant opening, and getting his feet wet at a new beachfront property.
Tell us about your journey through sbe and how you ended up in Hallandale, FL:
I started with the company in 2007 as a busser. My first manager was Matt Erickson and he really opened my eyes to the opportunity that this company would have for me in the future. I was given an opportunity from Costas and Mio to become a manager and I jumped at it.
As the opening of SLS Vegas approached, I went after the opportunity to become the GM of LiFE nightclub, then Director of Operations overseeing The Sayers Club, Foxtail day and nightclub and LiFE. When the option came up to open a three story venue in the sand with elements of nightlife, restaurant and hotel I couldn’t pass it up.
The best/worst part of a restaurant opening:
I love the challenge. Every opening has its challenges and I look at that as an opportunity to learn something. After so many openings it becomes a game to try to create the perfect and seamless experience. It is never perfect but I like to think we get closer and closer to perfection with each opportunity.
