We sat down with ThinkFoodGroup’s Wine Director, Andy Myers, as he prepared for the celebration of the Gil Family Estate’s 100th Anniversary at Bazaar Meat on April 28th.

Tell us something interesting about yourself that we might not know.

I am a drummer in a heavy metal band.

What do you think makes a great wine?

A balance and tension between structural components and straight up deliciousness.

If you had to drink only 3 wines for the rest of your life what would they be?

Krug, Raveneau “Montee de Tonnerre” Chablis & Donnhoff “Niederhauser Hermannsholle” Spatlese Riesling

We’ve heard that The Bazaar is hosting an exclusive event with The Gil Family Estates at Bazaar Meat. Can you tell us a little bit more about the collaboration?

Family Juan Gil have been friends and supporters of José and myself and we have enjoyed the wines and their friendship for many years. With the release of the 100th anniversary wine we talked and thought it would be wonderful to celebrate this momentous occasion for Juan Gil. What better way than by breaking bread with fans of the wine and fans of José’s delightful menus?

Can you tell us a little bit more about how you came up with the vibrant pairings you have created for this dinner?

I work closely with Chef David Thomas and my incredibly talented sommelier team of Chloe and Michael. We taste through the wines as a team and begin the dialog about ideal pairings and dishes. We are fortunate that these wines are so food friendly and lend themselves to the talents of the Bazaar Meat kitchen. Creating pairings like this feels more like play than work.
