Role Call: Giancarlo Pagani Brings Service and Style to South Beach

Giancarlo Pagani learned about hospitality from the best: his father. A second generation restaurateur, Pagani heads up sbe’s South Beach establishments The Bazaar by José Andrés, Hyde Beach and Cleo Restaurant. With a knack for making every guest feel like a VIP, Pagani is now being honored for his excellence in service and style, making Zagat’s coveted list “Miami’s 30 Under 30,” as a “rock star redefining the industry.” For our ongoing Role Call series—where we go behind the scenes to introduce you to the colorful crew that is sbe—we caught up with Pagani, below.

What is your role?

I am the Area General Manager of Restaurants for sbe Miami. I oversee the operations of The Bazaar by José Andrés Miami, F&B Operations in the SLS Hotel South Beach and Cleo Restaurant at The Redbury South Beach.

When and how did you get your start with sbe?

I was born in Los Angeles, and am a second generation restaurateur. My father Jorge raised me with a deep appreciation for the service, vibe, ambiance and glamor of restaurants. I began my career with Michael Mina Restaurant Group, eventually helping to open Michael Mina’s joint venture with sbe, XIV by Michael Mina. It was there that I was exposed to the excitement of sbe culture through its hotels, restaurants, and nightclubs eventually moving into a full-time position with sbe.

In 2012, I relocated to Miami Beach to open SLS South Beach, as the General Manager of The Bazaar by José Andrés. Most recently, I opened Cleo Restaurant‘s third installment at The Redbury Hotel South Beach.

When you’re not on the floor or back of house, where can we find you?

When I am not in the restaurants, you can find me checking out new restaurants, hotels, and nightclubs or hanging with my girlfriend Pharis and our two dogs, Steve McQueen and Butch Cassidy.

What do you love most about this industry/your job?

What I love most about this industry is the opportunity to touch so many different people’s lives through the power of food and service.

What have you learned since joining the sbe team?

Since joining sbe I have developed two vices. The first being that José Andrés turned me on to playing poker. The second is that Thomas Meding turned me on to smoking cigars. Both I enjoy whenever I have time!
