The Man Behind the Menu: Q&A with Hyde Sunset’s Chris Crary

Many know Hyde Sunset Kitchen + Cocktails for impromptu Justin Bieber performances, Kendall Jenner sightings, excellent craft cocktails, and more. But just as exciting are Hyde’s culinary offerings, spearheaded by veteran Chef Chris Crary. Here, the Man vs. Child: Chef Showdown challenger, Top Chef alum, new father, and man behind-the-menu, dishes on what’s good at Hyde Sunset Kitchen + Cocktails. But you’ll have to taste for yourself to fully experience his magic!

Hyde Sunset is known for its vibrant lounge, but there’s something magical guests miss out on earlier in the night. Can you tell us about the Hyde Sunset culinary concept?
The concept is simple. It’s fresh local ingredients that we let speak for themselves. Some of the influences on the flavor profiles are drawn from my travels to Thailand, Europe, Spain and all over America. At Hyde we understand that going out to dinner is a social gathering. We make a fun environment with casual, approachable, delicious food.

What’s your favorite dish on the Hyde Sunset Kitchen + Cocktails menu?
It’s hard to pick a favorite because they are all my children. How about if I give my top three?
– Brussels Sprouts with almonds, dates, local honey and sherry.
– Fried Chicken Sliders with herbed buttermilk biscuits, house made kimchi and honey aioli.
– Local Miso Black Cod with miso cauliflower puree, kumquats, puffed rice and shiso.

And your favorite cocktail?
The Ancho Old Fashion: I’m a huge fan of the Old Fashioned and this spin on it is so great. Old Fashioned’s can tend to be on the sweeter side so, with the addition of the spicy Ancho Chile Liqueur, it balances it out nicely.

Any musts for those of us with a sweet tooth?
We are in the middle of transitioning our dessert menu to summer desserts so I may very shortly have a new favorite. There is one dish that will always be on, and that’s our very simple brown butter cookies with spiced milk. It is so classic and delicious!

What would a date night be like at Hyde Sunset?
Date night, what’s that? Ha. That is the beauty of Hyde. You can come for drinks, have dinner, finish your dessert and then hang out for the nightlife scene.
