Next Level Good: A Visit to Hyde Sunset Kitchen + Cocktails

Just one block up from its original location, Hyde Sunset Kitchen + Cocktails is a refined space for LA sophisticates, where one can eat, drink, and play without ever having to leave. At this popping West Hollywood restaurant/lounge hybrid, you could spend your entire evening under one roof without the slightest desire to hit up the valet, trying to bounce. The decor encompasses nature, warmth, and our animalistic tendencies, the vibe is true to its name and killer cocktails like the “Bulliet Bourbon” with freshly pressed lemon juice, house blended clover honey syrup, brut champagne and strawberry, don’t disappoint.

I recently had the opportunity to spend an evening at the new Hyde, where I sampled the rich, ingredient-focused menu developed by Chef Chris Crary. As I cozied up next to a beautiful roaring fire, Chef Crary graciously joined me to discuss the inspiration behind his creations, which focuses on what’s local and in season. We chatted about his weekly trips to the farmer’s market and his favorites on the menu, including the Torchio Bolognese, with chicken bolognese, artichoke and lemon; and the Local Black Cod made with miso cauliflower puree, kumquat, puffed rice. Not to be overlooked is the Lamb Rack, two slabs of lamb so tender and moist you’ll think it was created for the gods—paired with mint and walnut pesto, cherry and endive.

On the lighter side is Hyde’s Beet Salad – a personal favorite of mine during the meal – topped with marcona almonds, mizuna, pickled beet goat cheese, rye and cocoa. When accompanied by the Charred Broccolini with walnut, burrata, and roasted tomato, it’s as if a flavor bomb exploded in your mouth.

Chef Crary utilizes a wood grill with mesquite oak to invoke a delicious smokey flavor in many of his meats and vegetables. It’s flavors like these that make Hyde’s menu rich with offerings that will satisfy any palate. I cannot wait to return to see what magic Chef Crary has created in the kitchen with the upcoming season’s available ingredients!
